What is cake dough?

Today, the baking trend is attracting a lot of young people who are passionate about making specialty cakes in Vietnam, especially flexible cakes. However, not everyone knows for sure what the dough is and where to buy it for quality and safety.

Flexible cake flour  is a rather special type of dough, when making cakes, it does not need to be processed through heat and can be used immediately after it has been baked. Sticky rice flour is a type of glutinous rice flour made from sticky rice after it has been roasted, then ground into a fine powder, white in color and fragrant with the smell of glutinous rice.

Common types of cake dough

We can find the 3 most common types of cake dough on the market:

Traditional flour: This is a traditional flour of the Northern people, this powder is delicious with the smell of roasted glutinous rice without using the aroma of grapefruit flowers. This flour when making cakes often has an attractive aroma and bold traditional flavor of Northern cakes. However, this powder has a slightly cloudy color. You find this flour with the name: Flour for making sticky rice.

 

Southern sticky rice cake dough: This is a kind of sticky rice cake made from the South, with a beautiful white color. Suitable for making cakes for gifts. However, when making the cake, it is not as delicious as the Northern sticky rice cake, so it will smell more grapefruit flower flavor. This powder you can find and buy with the name: Sanh Ky sticky rice cake powder.

slug cake dough: It is considered a sticky rice flour that has been roasted but is not used as cake flour, but is used to slug the fillings for moon cakes to help drain the cake and reduce the amount of oil and waste. lost to the oil layer during the curing process.

How to make cake dough

As above, I introduced sticky rice flour with the main ingredient being roasted glutinous rice. However, they need to go through many stages to become the type of cake dough for us to use.

Normally, making flexible cake dough through the following stages:

STAGE 1: Preparing glutinous rice

Glutinous rice is washed thoroughly, cleaned of impurities through a lot of water and then left to drain. Then put it on the roasting stove, roast it on medium heat for the pan to heat up. Roasting glutinous rice should be roasted evenly so that the rice does not burn. When the rice is yellow, it's fine, if it's crunchy and a bit hard, the rice is now cooked.

Note: At this stage, the pan should be heated to medium heat because glutinous rice is easy to cook, when the rice is roasted, you should add a little at a time so that the rice is cooked evenly and not burned. Do not add oil to the pan.

STAGE 2: Perform flour milling

For this stage we need the help of a flour mill, a flour mill will help us obtain a smooth, even powder.

STEP 3: Mix the dough

Make the dough mix according to the recipe skillfully. We make flour mix according to 1:1 formulas corresponding to sugar and water. Mix sugar water and cake flour in a ratio of 2:1. Usually 300g of sugar water, add 20ml of cooking oil and 10ml of grapefruit essential oil to get the best powder.

Completing a delicious batch of dough is actually not as difficult as making pies, as baking is usually done through heat absorption stages. If the temperature is not correct, the cake will easily spoil. But for the flexible cake, you can skip the heat treatment stages because the cake can be used immediately. Although the process of making the cake dough is quite complicated, in return you will have a quick batch of cakes after the baking stage.
